Nova Scotia Lobster Rolls
Ingredients
- 1 tablespoon butter, softened

- 4 roll (blank)s hot dog buns or kaiser rolls, split

- 4 large leaf (blank)s lettuce leaves

- 1½ pounds cooked and cubed lobster meat
-
- 2 tablespoons mayonnaise
-
- 1 teaspoon fresh lime juice
-
- 1 dash hot pepper sauce (e.g. Tabasco™)

- 2 medium (4-1/8" long)s green onions, chopped
-
- 1 stalk celery, finely chopped
-
- 1 pinch salt and pepper to taste
-
- 1 pinch dried basil, parsley or tarragon

Directions
- Step 1: Melt butter in a small heavy bottomed saucepan over medium-high heat. When butter is hot and foaming, add garlic and stir to combine and infuse. Remove from heat immediately & reserve at room temperature.

- Step 2:Combine lobster, mayo, celery, garlic, red onion, 2 tablespoons garlic butter, lemon zest, salt & pepper in a large bowl and hold, chilled.

- Step 3: Brush remaining garlic butter on both sides of the OUTSIDE of hog dog buns and grill, or toast the outside of the bun in a pan – like a grilled cheese – until golden on both sides.

- Spoon readied lobster mix into the bun and serve

Nanaimo Bars
Ingredients
1 egg, beaten
1¾ cups graham cracker crumbs
1 cup flaked coconut
½ cup finely chopped almonds (Optional)
2 tablespoons mayonnaise
1 teaspoon fresh lime juice
2 cups confectioners' sugar
4 (1 ounce) squares semisweet baking chocolate
2 teaspoons butter
Directions
Step 1: In the top of a double boiler, combine 1/2 cup softened butter, cocoa powder, and sugar. Stir occasionally until melted and smooth. Beat in egg and stir until thick, 2 to 3 minutes.
Step 2: Remove from the heat and mix in graham cracker crumbs, coconut, and almonds. Press into the bottom of an ungreased 8x8-inch pan.
Step 3: For the middle layer, beat remaining 1/2 cup softened butter, heavy cream, and custard powder until light and fluffy. Mix in confectioners' sugar until smooth. Spread over the bottom layer in the pan. Chill to set.
Step 4: While the second layer is chilling, melt semisweet chocolate and 2 teaspoons butter together in the microwave or over low heat.
Step 5: Spread melted chocolate mixture over chilled bars. Let the chocolate set before cutting into squares.
